The oven should be preheated to about 350 degrees and line 12 cupcake muffin tins with paper liners or butter a pan of 8-inch cake pan. Mix the brown sugar and eggs for three up to four minutes on medium-high speed until it is light and thick. Also mix the buttermilk, oil and vanilla. Add the oil mixture to the sugar and egg mixture.

Sift together the salt and the sifted flour, then the cinnamon and the baking soda plus the baking powder and ginger. Fold in the flour mixture into the sugar and egg mixture. Also add the raisins, carrots and walnuts and continue to add to the mix. Transfer into the readied cake pan or the lined cupcake tins.

Baking the cake will take around an hour to an hour and a half and if you decided to make carrot cake cupcakes instead the backing time reduces to just fifty minutes. Either way, bake until the top springs back when it is lightly pressed and golden brown on the top. The best way to make sure it is entirely backed is to test the centre with a cake tester.

It needs a good thirty minutes to cool down before you can plan to start decorating it. There are many ways to decorate the cupcakes as well, including frosting, colourful cherries or simply grated chocolate.
